It's a dessert that stands alone but also welcomes simple, classic sides.

2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup granulated sugar
3 tablespoons unsweetened cocoa powder
1/2 cup milk
1/3 cup melted butter
1 teaspoon vanilla extract
3/4 cup packed brown sugar
1/4 cup unsweetened cocoa powder
1 3/4 cups hot water

Grease the inside of a slow cooker with butter or non-stick spray.
In a medium bowl, whisk together the flour, baking powder, salt, granulated sugar, and 3 tablespoons of cocoa powder.
Stir in the milk, melted butter, and vanilla extract until smooth.
Spread the batter evenly in the bottom of the slow cooker.
In a separate bowl, mix the brown sugar and 1/4 cup cocoa powder. Sprinkle this mixture evenly over the batter.
Pour the hot water over the top, but do not stir.
Cover and cook on high for 2 to 2 1/2 hours, or until the center is set and the edges are pulling away from the sides.
Turn off the slow cooker and let the cake cool for about 15 minutes before serving.
Variations & Tips
For a richer flavor, you can add a handful of chocolate chips to the batter. If you're feeling adventurous, a pinch of cinnamon or a dash of espresso powder can enhance the chocolatey goodness. For a nutty twist, sprinkle chopped walnuts or pecans over the top before cooking. Remember, the key to a perfect lava cake is not to overcook it—keep an eye on the edges and the center for the best results.
