Chocolate Pecan Balls
Servings: 24 balls
Ingredients
1 cup pecans, finely chopped
1 cup graham cracker crumbs
1 cup powdered sugar
1/4 cup unsweetened cocoa powder
1/2 cup unsalted butter, melted
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup semi-sweet chocolate chips, melted
Directions
In a large mixing bowl, combine the chopped pecans, graham cracker crumbs, powdered sugar, and cocoa powder.
Add the melted butter, vanilla extract, and salt to the dry ingredients. Stir until the mixture is well combined and forms a dough-like consistency.
Using your hands, roll the mixture into small balls, about 1 inch in diameter.
Place the balls on a baking sheet lined with parchment paper.
In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between, until smooth.
Dip each pecan ball into the melted chocolate, ensuring it is fully coated, and place back on the parchment paper.
Allow the chocolate to set at room temperature or refrigerate for faster results.
Once the chocolate is set, store the pecan balls in an airtight container.
Variations & Tips
For a different flavor, try using dark chocolate chips or white chocolate for the coating. You can also add a splash of bourbon or rum to the mixture for an adult version of this treat. If you have picky eaters, consider rolling the balls in crushed nuts or sprinkles before the chocolate sets for added texture and fun. For those with nut allergies, substitute the pecans with crushed pretzels or oats for a similar crunch.
