Cooktop Cove: 'Amish Harvest Elegance' – my mother-in-law says it’s the reason she loves Thanksgiving so much.
By Georgia Lynn
Green Bean Almondine is a dish that brings back memories of Sunday dinners at Grandma's house, where the kitchen was filled with the comforting aroma of home-cooked meals. This Amish oven-baked version is a nod to the simplicity and heartiness of Midwestern cooking, where fresh ingredients from the garden are transformed into something truly special. The combination of tender green beans and the nutty crunch of almonds makes this dish a delightful addition to any meal. It's a recipe that has been passed down through generations, cherished for its ease and the way it brings people together around the table.
This Green Bean Almondine pairs beautifully with a roasted chicken or a hearty meatloaf, making it a perfect side for a cozy family dinner. You might also consider serving it alongside mashed potatoes or a warm loaf of homemade bread to soak up any extra buttery goodness. For a lighter meal, it can complement a simple grilled fish, allowing the fresh flavors of the beans and almonds to shine.
Amish Oven-Baked Green Bean Almondine
Servings: 6
Ingredients
1 1/2 pounds fresh green beans, trimmed
1/4 cup sliced almonds
3 tablespoons unsalted butter
1 tablespoon olive oil
2 cloves garlic, minced
Salt and pepper to taste
Juice of 1 lemon
Directions
Preheat your oven to 350°F (175°C).
Bring a large pot of salted water to a boil. Add the green beans and blanch for about 3-4 minutes until they are bright green and just tender. Drain and set aside.
In a large oven-safe skillet, melt the butter and olive oil over medium heat. Add the garlic and sauté for about 1 minute until fragrant.
Add the blanched green beans to the skillet, tossing them to coat in the garlic butter mixture. Season with salt and pepper.
Sprinkle the sliced almonds over the green beans.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, until the almonds are golden and the green beans are tender.
Remove from the oven and drizzle with lemon juice before serving.
Variations & Tips
For a touch of sweetness, you can add a handful of dried cranberries to the dish before baking. If you prefer a bit of spice, try adding a pinch of red pepper flakes to the garlic butter. For a richer flavor, substitute the olive oil with more butter or use a flavored butter like garlic herb. You can also experiment with different nuts, such as pecans or walnuts, for a different twist on the classic almondine.
