Cooktop Cove: 'Amish Sweet Harvest Joy' – the simplest dish that always wins the most praise!
By Georgia Lynn
In the heart of the Midwest, where the fields stretch out like a patchwork quilt under the vast sky, simple and hearty dishes have always been the backbone of family gatherings. Amish glazed carrots are one such dish, bringing together the humble carrot with a sweet, buttery glaze that feels like a warm hug on a chilly day. This recipe is a nod to the resourcefulness and love of home-cooked meals that define Midwestern kitchens. With just a few ingredients and a slow cooker, you can create a side dish that's both comforting and elegant, perfect for any occasion.
These glazed carrots pair beautifully with a roasted chicken or a tender pot roast, their sweetness balancing the savory flavors of the main dish. Add a side of creamy mashed potatoes or a fresh green salad to round out the meal. For a true taste of the Midwest, serve alongside warm, crusty bread to soak up every last drop of the delicious glaze.
Slow Cooker Amish Glazed Carrots
Servings: 6
Ingredients
2 pounds of carrots, peeled and sliced
1/2 cup of brown sugar
1/4 cup of butter, melted
1/4 cup of water
1 tablespoon of apple cider vinegar
1/2 teaspoon of salt
1/4 teaspoon of black pepper
1/4 teaspoon of ground cinnamon
Directions
Place the sliced carrots in the slow cooker.
In a small bowl, mix together the brown sugar, melted butter, water, apple cider vinegar, salt, pepper, and cinnamon.
Pour the mixture over the carrots, stirring to coat them evenly.
Cover the slow cooker and cook on low for 4-5 hours, or until the carrots are tender.
Stir the carrots once more before serving to ensure they are well coated with the glaze.
Variations & Tips
For a bit of a twist, try adding a teaspoon of grated fresh ginger to the glaze for a hint of warmth and spice. If you prefer a less sweet version, reduce the brown sugar to 1/3 cup. You can also add a handful of raisins or chopped pecans for added texture and flavor. For a touch of freshness, sprinkle some chopped parsley over the carrots just before serving.
