Ground Beef and Cornbread Casserole

Ingredients
1 pound ground beef
1 medium onion, chopped
1 bell pepper, chopped
2 cloves garlic, minced
1 can (15 oz) diced tomatoes, drained
1 can (15 oz) corn, drained
1 cup shredded cheddar cheese
1 package (8.5 oz) cornbread mix
1/3 cup milk
1 egg
Salt and pepper to taste
1 tablespoon olive oil
Directions
Preheat your oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, sautéing until they are soft, about 5 minutes.
Add the minced garlic to the skillet and cook for another minute until fragrant.
Add the ground beef to the skillet, cooking until browned and fully cooked. Drain any excess fat.
Stir in the diced tomatoes and corn, and season with salt and pepper to taste. Allow the mixture to simmer for about 5 minutes.
Transfer the beef mixture into a greased 9x13 inch baking dish, spreading it evenly.
Sprinkle the shredded cheddar cheese over the beef mixture.
In a separate bowl, prepare the cornbread mix according to the package instructions, usually by mixing it with milk and an egg.
Pour the cornbread batter over the beef and cheese layer, spreading it evenly with a spatula.
Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden brown and cooked through.
