Country Skillet Surprise is a dish that takes me back to the bustling kitchen of my grandmother's farmhouse, where the aroma of sizzling bacon and onions filled the air. This recipe is a true testament to the resourcefulness of Midwestern cooking, where every meal was crafted with love and whatever ingredients were on hand. It's a versatile dish that can be adapted to whatever you have in your pantry, making it perfect for those days when you want to create something hearty and comforting without a trip to the store.
This skillet dish pairs beautifully with a side of homemade cornbread or a simple green salad dressed with a tangy vinaigrette. For a true Midwestern feast, serve it alongside some pickled beets or a jar of homemade applesauce. A dollop of sour cream on top adds a creamy contrast to the savory flavors.
Country Skillet Surprise
Servings: 4
Ingredients
4 slices of bacon, chopped
1 medium onion, diced
2 cloves of garlic, minced
1 bell pepper, diced
4 medium potatoes, peeled and diced
1 cup of cooked ham, diced
4 large eggs
Salt and pepper to taste
1 cup of shredded cheddar cheese
2 tablespoons of chopped fresh parsley
Directions
1. In a large skillet, cook the chopped bacon over medium heat until crisp. Remove the bacon with a slotted spoon and set aside, leaving the drippings in the skillet.
2. Add the diced onion and garlic to the skillet and sauté until the onion is translucent, about 3 minutes.
3. Stir in the bell pepper and potatoes, cooking until the potatoes are tender and golden brown, about 10-15 minutes.
4. Add the cooked ham to the skillet and stir to combine.
5. Make four wells in the potato mixture and crack an egg into each well. Cover the skillet and cook until the eggs are set to your liking.
6. Season with salt and pepper, then sprinkle the shredded cheddar cheese over the top. Cover again until the cheese is melted.
7. Garnish with the cooked bacon and fresh parsley before serving.
Variations & Tips
For a spicier version, add a diced jalapeño or a pinch of red pepper flakes with the bell pepper. You can also substitute the ham with cooked sausage or leftover roast chicken. If you prefer a vegetarian option, omit the meat and add more vegetables like mushrooms or zucchini. For a touch of sweetness, toss in some corn kernels or diced sweet potatoes.
