BBQ Pulled Pork Potato Casserole is one of those comforting dishes that brings back memories of family gatherings and potlucks in my hometown. It's a hearty, flavorful meal that combines the smoky goodness of pulled pork with the creamy texture of mashed potatoes. Perfect for those busy weeknights when you want something satisfying but don't have hours to spend in the kitchen. Plus, it's a great way to use up leftover pulled pork, making it both economical and delicious.
This casserole pairs wonderfully with a fresh green salad or some steamed broccoli to balance out the richness. You might also consider serving it with a side of coleslaw for a bit of crunch and tang. If you're feeling indulgent, a warm cornbread on the side would complement the BBQ flavors beautifully.
BBQ Pulled Pork Potato Casserole
Servings: 6
Ingredients
3 cups pulled pork
1 cup BBQ sauce
4 cups mashed potatoes
1 cup shredded cheddar cheese
1/2 cup chopped green onions
1/2 cup sour cream
Salt and pepper to taste
Directions
Preheat your oven to 375°F (190°C).
In a large bowl, mix the pulled pork with the BBQ sauce until well combined.
Spread the BBQ pulled pork mixture evenly in the bottom of a 9x13 inch baking dish.
In another bowl, combine the mashed potatoes with sour cream, salt, and pepper.
Spread the mashed potato mixture over the pulled pork layer.
Sprinkle the shredded cheddar cheese over the top of the mashed potatoes.
Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool for a few minutes before serving.
Garnish with chopped green onions before serving.
Variations & Tips
For a spicier kick, consider adding some chopped jalapeños to the pulled pork mixture. You can also swap out the cheddar cheese for pepper jack if you like a bit more heat. If you're looking to lighten it up, use Greek yogurt instead of sour cream in the mashed potatoes. For a vegetarian version, substitute the pulled pork with jackfruit and use a vegetarian BBQ sauce.
