For a touch of elegance, consider serving with a glass of crisp white wine, such as a Chardonnay or Pinot Grigio, to complement the dish's rich flavors.
Angel Chicken Over Pasta
Servings: 4
Ingredients
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1/2 cup chicken broth
1/2 cup dry white wine
1 package (8 ounces) cream cheese, softened
1 can (10.5 ounces) condensed cream of mushroom soup
1 packet (1 ounce) Italian salad dressing mix
1/2 cup grated Parmesan cheese
12 ounces angel hair pasta
Salt and pepper to taste
Chopped fresh parsley for garnish
Directions
Preheat your oven to 350°F (175°C).
In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt and pepper, then brown them on both sides until golden, about 4-5 minutes per side.
Transfer the browned chicken to a baking dish.
In the same skillet, add the chicken broth and white wine, scraping up any browned bits from the bottom of the pan.
Reduce the heat to low and stir in the cream cheese, cream of mushroom soup, and Italian dressing mix. Cook until the cream cheese is melted and the sauce is smooth.
Pour the sauce over the chicken in the baking dish, then sprinkle the Parmesan cheese on top.
Cover the dish with foil and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and tender.
While the chicken is baking, cook the angel hair pasta according to package instructions. Drain and set aside.
Serve the chicken and sauce over the cooked pasta, garnished with chopped parsley.
Variations & Tips
For a lighter version, you can substitute Greek yogurt for the cream cheese and use a low-sodium chicken broth. If you prefer a bit of spice, add a pinch of red pepper flakes to the sauce. For a gluten-free option, use gluten-free pasta and ensure the soup and dressing mix are gluten-free. You can also add vegetables like spinach or mushrooms to the sauce for extra nutrition and flavor.
