One Pot Broccoli Cheese Orzo

1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 cup orzo pasta
2 cups chicken or vegetable broth
2 cups broccoli florets
1 cup shredded cheddar cheese
1/2 cup milk or cream
Salt and pepper to taste
1/4 teaspoon paprika (optional)
Directions
1. In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
2. Stir in the minced garlic and cook for another minute until fragrant.
