French Onion Beef and Rice Casserole

Ingredients
2 tablespoons olive oil
2 large onions, thinly sliced
1 pound ground beef
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 cup beef broth
1 cup uncooked white rice
1 can (10.5 ounces) condensed French onion soup
1 cup shredded Gruyère cheese
Directions
Preheat your oven to 350°F (175°C).
In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes.
Add the ground beef to the skillet with the onions. Cook until the beef is browned and cooked through, breaking it up with a spoon as it cooks. Season with salt, pepper, and thyme.
Stir in the beef broth, rice, and condensed French onion soup. Mix well to combine.
Transfer the mixture to a greased 9x13-inch baking dish. Cover with foil and bake for 30 minutes.
Remove the foil, sprinkle the Gruyère cheese over the top, and return to the oven. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Let the casserole sit for a few minutes before serving to allow the flavors to meld together.
Variations & Tips
For a lighter version, you can substitute ground turkey or chicken for the beef. If you prefer a vegetarian option, omit the meat and add sliced mushrooms for a similar umami flavor.
