There's something so comforting about the smell of cinnamon wafting through the house, especially on a lazy weekend morning. These low carb honey cinnamon roll ups are my go-to when I'm craving something sweet but want to keep it light. Inspired by the classic cinnamon rolls my grandma used to make, these roll ups are a quicker, healthier version that won't have you feeling guilty. Perfect for anyone looking to indulge without the carb overload.
These roll ups are delightful on their own, but if you're looking to make it a more filling meal, consider pairing them with a side of Greek yogurt and fresh berries. A hot cup of coffee or tea also complements the warm, spicy notes of the cinnamon perfectly. For a brunch spread, you could serve them alongside a veggie omelet or a fresh salad to balance out the sweetness.
Low Carb Honey Cinnamon Roll Ups
Servings: 4
Ingredients
4 low carb tortillas
2 tablespoons unsalted butter, melted
2 tablespoons honey
1 teaspoon ground cinnamon
1/4 cup chopped nuts (such as pecans or walnuts)
1/4 cup cream cheese, softened
Directions
Preheat your oven to 350°F (175°C).
In a small bowl, mix the melted butter, honey, and cinnamon until well combined.
Spread a thin layer of cream cheese over each tortilla.
Drizzle the honey-cinnamon mixture over the cream cheese layer.
Sprinkle the chopped nuts evenly over the tortillas.
Roll each tortilla tightly and place them seam-side down on a baking sheet.
Bake in the preheated oven for about 10-12 minutes, or until the edges are golden and crispy.
Allow to cool slightly before slicing into bite-sized pieces. Serve warm.
Variations & Tips
For a nut-free version, you can skip the nuts or replace them with seeds like sunflower or pumpkin seeds. If you're not a fan of cream cheese, try using a low carb yogurt spread instead. You can also add a touch of vanilla extract to the honey-cinnamon mixture for an extra layer of flavor. For those who like a bit of spice, a pinch of cayenne pepper can add a surprising kick to the sweetness.
