By Morgan Reed
Slow Cooker Thyme and Balsamic Beef Tips with Red Wine is a delightful dish that brings together the rich flavors of beef, balsamic vinegar, and red wine, all enhanced by the aromatic touch of thyme. This recipe is a modern take on classic slow-cooked beef dishes often found in European cuisine. The slow cooking process allows the beef to become incredibly tender, making it a perfect choice for a comforting meal. The addition of balsamic vinegar and red wine adds depth and complexity, making this dish a standout for any dinner occasion.
This dish pairs beautifully with creamy mashed potatoes or a side of buttered egg noodles, which help soak up the savory sauce. For a lighter option, serve it alongside a fresh green salad or roasted seasonal vegetables. A crusty loaf of bread is also a fantastic accompaniment, perfect for mopping up the delicious sauce.
Slow Cooker Thyme and Balsamic Beef Tips with Red Wine
Servings: 4
Ingredients
2 pounds beef tips
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
1 cup beef broth
1/2 cup balsamic vinegar
2 tablespoons Worcestershire sauce
2 tablespoons soy sauce
1/2 cup red wine
1 teaspoon dried thyme
Salt and pepper to taste
2 tablespoons cornstarch
2 tablespoons water
Directions
Heat olive oil in a large skillet over medium-high heat. Add the beef tips and brown them on all sides. Transfer the beef to the slow cooker.
In the same skillet, add the chopped onion and sauté until translucent. Add the minced garlic and cook for another minute. Transfer the onions and garlic to the slow cooker with the beef.
Pour the beef broth, balsamic vinegar, Worcestershire sauce, soy sauce, and red wine into the slow cooker. Stir to combine.
Add the dried thyme, salt, and pepper. Stir again to mix all the ingredients well.
Cover the slow cooker and cook on low for 6-8 hours, or until the beef is tender.
Once the beef is cooked, mix the cornstarch with water to create a slurry. Stir the slurry into the slow cooker to thicken the sauce.
Serve the beef tips hot with your choice of sides.
Variations & Tips
For a different flavor profile, you can substitute the thyme with rosemary or add a bay leaf for an earthy note. If you prefer a sweeter sauce, consider adding a tablespoon of brown sugar or honey. For a gluten-free option, ensure the soy sauce is gluten-free or substitute with tamari. You can also add mushrooms or carrots to the slow cooker for additional texture and flavor.
