Cinnamon Sugar French Toast Muffins
Servings: 12 muffins
Ingredients
2 cups of day-old bread, cubed
1 cup of milk
3 large eggs
1/4 cup of granulated sugar
1 teaspoon of vanilla extract
1 teaspoon of ground cinnamon
1/4 teaspoon of salt
1/4 cup of unsalted butter, melted
1/4 cup of brown sugar
1/4 cup of granulated sugar
1 teaspoon of ground cinnamon
Directions
Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin.
In a large bowl, whisk together the milk, eggs, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined.
Add the cubed bread to the mixture, stirring gently to ensure all pieces are coated. Let it sit for about 10 minutes to allow the bread to absorb the liquid.
Divide the bread mixture evenly among the prepared muffin cups.
In a small bowl, mix together the melted butter, brown sugar, granulated sugar, and ground cinnamon to create the topping.
Spoon the cinnamon sugar topping over each muffin, pressing it down slightly.
Bake in the preheated oven for 20-25 minutes, or until the muffins are set and the tops are golden brown.
