Cooktop Cove: Such a great recipe! It's even better the day after... if you can resist!
By Georgia Lynn
This Southern-style mayonnaise and parmesan chicken is a dish that brings back memories of Sunday dinners at Grandma's house. The recipe combines the creamy richness of mayonnaise with the savory tang of parmesan cheese, creating a crust that keeps the chicken moist and flavorful. Originating from the heart of the Midwest, this dish is a testament to the simplicity and comfort of traditional home cooking. It's perfect for those who want to bring a touch of Southern warmth to their dinner table.
This dish pairs beautifully with classic Southern sides like buttery mashed potatoes or a crisp green bean salad. For a touch of sweetness, consider serving it alongside cornbread or a fresh fruit salad. A tall glass of iced tea would complete the meal, making it a delightful experience reminiscent of family gatherings on warm summer evenings.
Southern Style Mayonnaise and Parmesan Chicken
Servings: 4
Ingredients
4 boneless, skinless chicken breasts
1 cup mayonnaise
1/2 cup grated parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
Salt and pepper to taste
1 cup breadcrumbs
1 tablespoon olive oil
Directions
Preheat your oven to 375°F (190°C).
In a medium bowl, mix together the mayonnaise, parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper until well combined.
Place the chicken breasts in a baking dish.
Spread the mayonnaise mixture evenly over each chicken breast, ensuring they are fully coated.
In a separate bowl, combine the breadcrumbs with olive oil and mix until the crumbs are lightly coated.
Sprinkle the breadcrumb mixture over the mayonnaise-coated chicken breasts.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the topping is golden brown.
Allow the chicken to rest for a few minutes before serving.
Variations & Tips
For a bit of a kick, add a pinch of cayenne pepper to the mayonnaise mixture. You can also experiment with different cheeses, such as asiago or romano, for a unique flavor twist. If you're looking for a lower-carb option, try using crushed pork rinds instead of breadcrumbs for the topping. This dish can also be adapted for grilling by wrapping the coated chicken in foil and cooking over medium heat until done.
