This low carb slow cooker sun-dried tomato chicken is a lifesaver for those busy weekdays when you want something delicious, creamy, and comforting without all the carbs. Inspired by my love for Mediterranean flavors and the convenience of a slow cooker, this dish brings together the tangy richness of sun-dried tomatoes with tender, juicy chicken. It's perfect for anyone looking to enjoy a hearty meal without spending hours in the kitchen.
This dish pairs beautifully with a simple side salad of mixed greens and a light vinaigrette, or you can serve it over a bed of cauliflower rice for a complete low-carb meal. Steamed broccoli or asparagus also make excellent sides, adding a pop of color and freshness to your plate.
Low Carb Slow Cooker Sun-Dried Tomato Chicken
Servings: 4
Ingredients
4 boneless, skinless chicken breasts
1 cup sun-dried tomatoes, chopped
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1 teaspoon dried basil
Salt and pepper to taste
2 tablespoons olive oil
1/4 cup fresh basil leaves, chopped (optional for garnish)
Directions
Heat the olive oil in a pan over medium heat. Sear the chicken breasts on both sides until golden brown, about 3-4 minutes per side. This step is optional but adds extra flavor.
Place the chicken breasts in the slow cooker.
In a bowl, whisk together the heavy cream, chicken broth, Parmesan cheese, minced garlic, dried basil, salt, and pepper.
Pour the cream mixture over the chicken in the slow cooker.
Add the chopped sun-dried tomatoes on top.
Cover and cook on low for 4-5 hours or until the chicken is cooked through and tender.
Before serving, stir in the fresh basil leaves if using.
Serve hot with your choice of sides.
Variations & Tips
For a dairy-free version, substitute the heavy cream with coconut cream and the Parmesan with nutritional yeast. You can also add some spinach or mushrooms to the slow cooker for extra veggies. If you prefer a spicier kick, add a pinch of red pepper flakes to the cream mixture. For a more robust flavor, try adding a splash of white wine to the sauce.
