Baked Garlic Parmesan Chicken Meatloaf Muffin Bites
Servings: 12 muffin bites
Ingredients
1 pound ground chicken
1/2 cup grated parmesan cheese
1/2 cup breadcrumbs
1/4 cup milk
1 large egg
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chopped fresh parsley
1/2 cup shredded mozzarella cheese
Directions
Preheat your oven to 375°F (190°C) and lightly grease a 12-cup muffin tin.
In a large bowl, combine the ground chicken, parmesan cheese, breadcrumbs, milk, egg, minced garlic, oregano, basil, salt, and pepper. Mix until all ingredients are well incorporated.
Fold in the chopped parsley and half of the shredded mozzarella cheese.
Divide the mixture evenly among the muffin cups, pressing gently to pack them in.
Sprinkle the remaining mozzarella cheese on top of each muffin.
Bake in the preheated oven for 20-25 minutes, or until the tops are golden and the internal temperature reaches 165°F (74°C).
Allow the muffin bites to cool slightly in the pan before removing them. Serve warm.
Variations & Tips
For a spicier version, add a pinch of red pepper flakes to the mixture. You can also substitute ground turkey or beef for the chicken if preferred.
