This slow cooker 5-ingredient bacon potato casserole is a lifesaver for those busy weekdays when you want something comforting without spending hours in the kitchen. Growing up in the Midwest, casseroles were a staple at family gatherings, and this dish brings back those cozy memories with every bite. It's perfect for anyone who loves the combination of crispy bacon and tender potatoes, all wrapped up in a creamy, cheesy goodness. Plus, it's a breeze to prepare, making it ideal for busy professionals like myself who still want to enjoy a homemade meal.
This casserole is quite hearty on its own, but it pairs beautifully with a simple green salad or some steamed vegetables to add a fresh contrast. If you're looking to make it a complete meal, consider serving it alongside some grilled chicken or a light soup. A crusty bread roll would also be a great accompaniment to soak up all the delicious flavors.
Slow Cooker 5-Ingredient Bacon Potato Casserole
Servings: 6
Ingredients
6 slices of bacon, cooked and crumbled
4 cups of diced potatoes (about 2 large potatoes)
1 cup of shredded cheddar cheese
1 can (10.5 oz) of cream of mushroom soup
1/2 cup of sour cream
Directions
1. Start by cooking the bacon until it's crispy. Once cooked, crumble it into small pieces and set aside.
2. In your slow cooker, layer half of the diced potatoes, half of the crumbled bacon, and half of the shredded cheese.
3. In a small bowl, mix together the cream of mushroom soup and sour cream until well combined.
4. Spread half of the soup mixture over the potato layer in the slow cooker.
5. Repeat the layers with the remaining potatoes, bacon, cheese, and soup mixture.
6. Cover the slow cooker and cook on low for 6-7 hours, or until the potatoes are tender.
7. Once cooked, give it a gentle stir to mix everything together, and serve hot.
Variations & Tips
For a bit of a kick, try adding some chopped jalapeños or a dash of hot sauce to the soup mixture. You can also swap out the cream of mushroom soup for cream of chicken or cheddar cheese soup for a different flavor profile. If you're looking to make it a bit healthier, consider using turkey bacon and reduced-fat cheese and sour cream. For a vegetarian version, omit the bacon and add some sautéed mushrooms or bell peppers for extra flavor.
