Growing up in the Midwest, meatloaf was a staple at our family dinners, and this version brings a modern, cheesy spin to the table. These individual meatloaf patties are topped with gooey melted cheddar and nestled in a tangy glaze that adds a burst of flavor. They're quick to prepare and sure to be a hit with the whole family.

Cheesy Mini Meatloaf Melts
Servings: 4
Ingredients
1 pound ground beef
1/2 cup breadcrumbs
1/4 cup milk
1 egg
1/2 cup shredded cheddar cheese
1/4 cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1/2 cup additional shredded cheddar cheese for topping
1/4 cup ketchup for glaze
1 tablespoon brown sugar
1 teaspoon mustard
Directions
Preheat your oven to 375°F (190°C).
In a large bowl, combine the ground beef, breadcrumbs, milk, egg, 1/2 cup shredded cheddar cheese, 1/4 cup ketchup, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Divide the mixture into 8 equal portions and shape each into a small patty.
Place the patties in a baking dish.
In a small bowl, mix 1/4 cup ketchup, brown sugar, and mustard to create the glaze.
Pour the glaze over the patties, ensuring each one is well-coated.
Bake in the preheated oven for 20 minutes.
Remove the baking dish from the oven and sprinkle the remaining 1/2 cup of shredded cheddar cheese over the patties.
Return to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
Let the meatloaf melts rest for a few minutes before serving.
Variations & Tips
For a healthier twist, you can substitute ground turkey or chicken for the beef. Add some finely chopped vegetables like bell peppers or mushrooms into the meat mixture for extra flavor and nutrition. If you're a fan of spice, try adding a dash of hot sauce or a pinch of cayenne pepper to the glaze. For a gluten-free version, use gluten-free breadcrumbs.
