Slow Cooker Pork with Dijon Mustard Cream Sauce

Ingredients
1 (3-pound) pork loin roast
1 tablespoon olive oil
1 teaspoon dried thyme
Salt and pepper to taste
1 cup chicken broth
1/2 cup Dijon mustard
1/4 cup white wine
1/2 cup heavy cream
Directions
Season the pork loin roast with thyme, salt, and pepper.
In a large skillet, heat the olive oil over medium-high heat. Sear the pork on all sides until golden brown.
Transfer the seared pork to a slow cooker.
In a bowl, whisk together the chicken broth, Dijon mustard, and white wine. Pour the mixture over the pork in the slow cooker.
Cover and cook on low for 6-8 hours, or until the pork is tender.
Remove the pork from the slow cooker and let it rest for a few minutes before slicing.
Stir the heavy cream into the sauce in the slow cooker. Adjust seasoning if needed.
Slice the pork and serve with the Dijon mustard cream sauce spooned over the top.
Variations & Tips
For a touch of sweetness, you might add a tablespoon of honey to the sauce mixture before slow cooking. If you prefer a bit of heat, a pinch of red pepper flakes can be added to the sauce.
