Cooktop Cove: I'm grateful to my German neighbor for sharing this dish—my husband loved it from the very first taste!

Slow cooker cheesy taco casserole is one of those dishes that brings a sense of warmth and comfort, perfect for busy weeknights or casual gatherings. Growing up in the Midwest, casseroles were a staple in my household, and this recipe combines that nostalgic comfort with the bold flavors of a classic taco night. It's a dish that's easy to prepare and lets the slow cooker do all the work, freeing up your time for other activities. Whether you're a busy professional or a parent juggling multiple tasks, this recipe is a lifesaver.
This cheesy taco casserole pairs wonderfully with a side of Mexican rice or a simple green salad topped with avocado and lime vinaigrette. For a fun twist, serve it with tortilla chips for scooping, or wrap it in a soft tortilla for a delicious taco-style meal. A dollop of sour cream or a sprinkle of fresh cilantro can add a refreshing touch to each serving.

1 cup frozen corn
2 cups shredded cheddar cheese
1 cup salsa
1 cup crushed tortilla chips

1. In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
2. Add the taco seasoning to the beef, along with the diced tomatoes with green chilies. Stir to combine.
3. In the slow cooker, layer the seasoned beef mixture, black beans, corn, and salsa.
4. Top with crushed tortilla chips and cover with shredded cheddar cheese.
5. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until everything is heated through and the cheese is melted.
6. Serve hot, garnished with your favorite toppings like sour cream, cilantro, or jalapeños.
Variations & Tips
For a spicier kick, add a chopped jalapeño or a pinch of cayenne pepper to the beef mixture. You can substitute ground turkey or chicken for a lighter version. If you prefer a vegetarian option, skip the meat and add more beans or some cooked quinoa for protein. For a creamier texture, mix in a half cup of cream cheese before serving.
