This dish draws inspiration from the classic Greek spanakopita, which traditionally features a filling of spinach and feta encased in phyllo dough. Oven Baked Spinach and Feta Puff Pastry Rolls
Servings: 12 rolls
Ingredients
1 package of puff pastry sheets (2 sheets), thawed
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
10 ounces fresh spinach, washed and chopped
1 cup crumbled feta cheese
1 egg, beaten
Salt and pepper to taste
1 tablespoon sesame seeds (optional)
Directions
Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
Add the minced garlic and cook for another minute until fragrant.
Stir in the chopped spinach and cook until wilted, about 5 minutes. Remove from heat and let cool slightly.
In a mixing bowl, combine the cooked spinach mixture with the crumbled feta cheese. Season with salt and pepper to taste.
Roll out the thawed puff pastry sheets on a lightly floured surface. Cut each sheet into 6 equal rectangles.
Place a spoonful of the spinach and feta mixture onto one end of each rectangle. Roll the pastry over the filling and seal the edges by pressing them together.
Place the rolls seam-side down on the prepared baking tray. Brush the tops with the beaten egg and sprinkle with sesame seeds if using.
Bake in the preheated oven for 15-20 minutes, or until the rolls are golden brown and puffed.
Remove from the oven and let cool slightly before serving.
Variations & Tips
For a twist, try adding some chopped sun-dried tomatoes or olives to the filling for extra flavor. You can also experiment with different cheeses, such as goat cheese or ricotta, for a creamier texture. If you prefer a spicier kick, add a pinch of red pepper flakes to the spinach mixture. For a vegetarian option, ensure that the puff pastry you use does not contain animal-derived ingredients.
