Cooktop Cove: I'm not one for complicated cooking, so when I found this straightforward recipe, I knew I had to make it. It's scrumptious!

Oven baked garlic parmesan pork rinds are a delightful twist on a classic snack that brings a touch of gourmet flair to your table. Originating from the tradition of making use of every part of the pig, pork rinds have been a beloved snack in many cultures. This version, with its savory garlic and parmesan coating, is perfect for those who love a crunchy, flavorful treat without the guilt of deep frying. It's a wonderful way to enjoy a low-carb, high-protein snack that the whole family can enjoy.
These crispy pork rinds are perfect on their own as a snack, but they also pair wonderfully with a fresh, tangy coleslaw or a light cucumber salad to balance the richness. For a more substantial meal, serve them alongside a hearty bowl of chili or a creamy spinach dip. They also make a great topping for soups or salads, adding a satisfying crunch.
Oven Baked Garlic Parmesan Pork Rinds
Servings: 4
Ingredients
1 pound pork skin, cut into small pieces
2 tablespoons olive oil
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup grated Parmesan cheese
1 tablespoon minced fresh parsley (optional)
Directions
Preheat your oven to 375°F (190°C).
In a large bowl, toss the pork skin pieces with olive oil, ensuring they are well coated.
Sprinkle the garlic powder, salt, and black pepper over the pork skins and toss again to distribute the seasonings evenly.
Spread the seasoned pork skins out in a single layer on a baking sheet lined with parchment paper.
Bake in the preheated oven for 40-50 minutes, or until the pork skins are golden brown and crispy.
Remove from the oven and immediately sprinkle the grated Parmesan cheese over the hot pork rinds, allowing it to melt slightly.
If desired, garnish with minced fresh parsley for a pop of color and freshness.
Let cool slightly before serving, as they will crisp up further as they cool.
Variations & Tips
For a spicier version, add a pinch of cayenne pepper or smoked paprika to the seasoning mix. If you prefer a more herby flavor, try adding dried oregano or thyme. For those who love a bit of sweetness, a light dusting of brown sugar before baking can create a sweet and savory contrast. If you're catering to dairy-free guests, you can skip the Parmesan and instead use nutritional yeast for a cheesy flavor without the cheese.
