Low Carb Spinach and Feta Quiche

Ingredients
1 tablespoon olive oil
1 small onion, finely chopped
3 cups fresh spinach, roughly chopped
4 large eggs
1 cup heavy cream
1/2 cup crumbled feta cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg
1 tablespoon chopped fresh parsley or chives
Directions
Preheat your oven to 375°F (190°C).
Heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
Add the spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and set aside.
In a large bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg until well combined.
Stir in the feta cheese, Parmesan cheese, and the cooked spinach and onion mixture.
Pour the mixture into a greased 9-inch pie dish or quiche pan.
Bake in the preheated oven for 30-35 minutes, or until the quiche is set and the top is golden brown.
Remove from the oven and let it cool slightly before slicing.
Garnish with fresh parsley or chives before serving.
Variations & Tips
For a different flavor profile, try adding sun-dried tomatoes or roasted red peppers to the quiche. You can also substitute the feta cheese with goat cheese for a creamier texture.
