Slow Cooker Pork and Potato Casserole
Servings: 6
Ingredients
2 pounds pork shoulder, cut into 1-inch cubes
4 large potatoes, peeled and cut into chunks
1 large onion, chopped
2 cloves garlic, minced
1 cup chicken broth
1 teaspoon dried thyme
1 teaspoon paprika
Salt and pepper to taste
Directions
1. Place the cubed pork in the bottom of the slow cooker.
2. Layer the potato chunks on top of the pork.
3. Add the chopped onion and minced garlic over the potatoes.
4. Pour the chicken broth over the ingredients in the slow cooker.
5. Sprinkle the thyme, paprika, salt, and pepper over the top.
6. Cover and cook on low for 6-8 hours, or until the pork is tender and the potatoes are cooked through.
7. Stir gently before serving to combine the flavors.
Variations & Tips
For a little extra flavor, you can add a tablespoon of Dijon mustard to the chicken broth before pouring it over the ingredients.
