Slow Cooker Sweet and Sour Pork with Bell Peppers
Servings: 4
Ingredients
1 1/2 pounds pork shoulder, cut into 1-inch cubes
1 tablespoon vegetable oil
1 large onion, chopped
1 red bell pepper, sliced
1 green bell pepper, sliced
1 cup pineapple chunks, canned or fresh
1/2 cup pineapple juice
1/3 cup brown sugar
1/3 cup apple cider vinegar
1/4 cup soy sauce
2 tablespoons ketchup
2 tablespoons cornstarch
Salt and pepper to taste
Directions
1. In a large skillet, heat the vegetable oil over medium-high heat. Add the cubed pork and sear until browned on all sides. Transfer the pork to the slow cooker.
2. In the same skillet, add the chopped onion and cook until translucent. Add the onion to the slow cooker.
3. Add the red and green bell pepper slices, pineapple chunks, and pineapple juice to the slow cooker.
4. In a small bowl, whisk together the brown sugar, apple cider vinegar, soy sauce, ketchup, and cornstarch until smooth. Pour this mixture over the pork and vegetables in the slow cooker.
5. Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the pork is tender and the sauce has thickened.
6. Season with salt and pepper to taste before serving.
