Oven Baked Beef and Mushroom Pasta Bake

Ingredients
12 oz pasta (such as penne or rigatoni)
1 lb ground beef
8 oz sliced mushrooms
1 small onion, diced
2 cloves garlic, minced
1 cup marinara sauce
1 cup beef broth
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs
2 tablespoons olive oil
Salt and pepper to taste
1 tablespoon chopped fresh parsley (optional)
Directions
Preheat your oven to 375°F (190°C).
Cook the pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3 minutes.
Add the garlic and sliced mushrooms to the skillet and cook until the mushrooms are tender, about 5 minutes.
Add the ground beef to the skillet, breaking it up with a spoon, and cook until browned. Drain any excess fat.
Stir in the marinara sauce and beef broth, and let the mixture simmer for about 5 minutes. Season with salt and pepper to taste.
In a large mixing bowl, combine the cooked pasta with the beef and mushroom sauce. Stir in the mozzarella and half of the Parmesan cheese.
Transfer the pasta mixture to a greased 9x13 inch baking dish.
Sprinkle the remaining Parmesan cheese and breadcrumbs evenly over the top.
Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and crispy.
Remove from the oven and let it cool for a few minutes before serving. Garnish with chopped parsley if desired.

For a vegetarian version, you can substitute the ground beef with a plant-based meat alternative or additional mushrooms. If you prefer a spicier dish, add a pinch of red pepper flakes to the sauce.
