Stuffed Jalapeño Cheese Bites

Ingredients
8 large jalapeños, seeded and finely chopped
1 cup cream cheese, softened
1 cup shredded cheddar cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1 cup all-purpose flour
2 large eggs, beaten
1 1/2 cups breadcrumbs
Oil for frying
Directions
1. In a medium bowl, mix together the cream cheese, cheddar cheese, garlic powder, onion powder, salt, and pepper until well combined.
2. Stir in the chopped jalapeños until evenly distributed throughout the cheese mixture.
3. Roll the cheese mixture into small balls, about 1 inch in diameter.
4. Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
5. Roll each cheese ball in the flour, then dip in the egg, and finally coat with breadcrumbs. Ensure each ball is fully covered.
6. Heat oil in a deep fryer or large pot to 350°F (175°C).
7. Fry the cheese bites in batches, turning occasionally, until they are golden brown and crispy, about 3-4 minutes.
