A side of roasted root vegetables, such as carrots and parsnips, can also add a hearty, earthy balance to the meal.
Sweet & Savory Slow Cooker Delight
Servings: 6-8 servings
Ingredients
1.5 kg (3.3 lbs) gammon joint
1.5 cups brown sugar
Directions
Grease the inside of your slow cooker to prevent sticking.
Sprinkle 1 cup of brown sugar evenly at the bottom of the slow cooker.
Place the gammon joint on top of the brown sugar layer.
Cover the gammon with the remaining 1/2 cup of brown sugar.
Set the slow cooker to low heat and cook for 8 hours, or until the gammon is tender.
Once cooked, carefully remove the gammon from the slow cooker and tent it with foil to keep warm.
Pour the cooking liquid into a saucepan and simmer over medium heat until it reduces to a thick glaze.
Slice the gammon and drizzle the glaze over the slices before serving.
Variations & Tips
For a different flavor profile, try adding a few cloves, a cinnamon stick, or a splash of apple cider to the slow cooker for a spiced twist. If you prefer a bit of heat, a pinch of red pepper flakes can add a subtle kick to the glaze. For a more savory version, consider adding a few tablespoons of soy sauce or Dijon mustard to the glaze. To make this dish even more festive, you can stud the gammon with cloves before cooking, which will infuse the meat with a warm, aromatic flavor.
