You will only need some basic soft flour or corn tortillas, scrambled eggs, grated pepper jack (or cheddar) cheese, salsa verde, avocado, cilantro, and scallions. Although this dish is incredibly filling and finger-lickingly good, the salsa verde and fresh cilantro make this a surprisingly bright dinner—absolutely perfect for enjoying on those late summer evenings in with the family. Good Cook begins by preheating the oven to 325°F before spreading out the tortillas on a plate or counter top. They then add a spoonful of scrambled eggs and a sprinkling of grated cheese to half of each tortilla (this is where the kids can help out!). The filled tortillas are then rolled tightly into little taquitos and placed into the bottom of the casserole dish. Depending on the size of your casserole dish, you can generally fit between 10 - 14 taquitos in. This cheese will form the top crust of the dish, so be sure to have enough grated to cover the entire dish.The casserole is then placed into the oven preheated to 325° F (uncovered) for 15 minutes, or until the cheese is melted. During these 15 minutes, you can quickly slice the scallions, roughly chop the cilantro leaves, and chop up the avocado into 1 inch-sized chunks. You don't want to cut the avocado too early before serving, as avocados tend to brown easily if left out for too long.Once the 15 minutes are up, Good Cook removes the casserole from the oven and adds the chopped avocado and cilantro leaves along with the sliced scallions.
