Cooktop Cove: Drizzle this sweet syrup over avocados, blend into vegan dessert that tastes decadent

Most Americans are aware that avocados are a nutrient-rich food, but don't realize how versatile they are. "A lot of people are freaked out by the idea of avocado in a dessert -- which is fair," says Laura Miller in the Tastemade video below. "However, it gives it a sweet, smooth texture that you can't get with anything else. It's sort of like magic."
Miller has created a Chocolate Avocado Pudding recipe that is not only surprisingly delicious (it doesn't taste like avocado!) but supplies lots of fiber, healthy fats, and vitamins C, K and B6.
The ingredients of the pudding are: avocados, agave or maple syrup, cocoa powder, coconut oil, balsamic vinegar, salt and nama shoyu (unpasteurized soy sauce). The shoyu is often surprising, but "it does not make the pudding taste like soy sauce," Miller says. "It just knocks out the taste of avocado and brings a little bit more complexity to the chocolate."

An alternative (vegetarian, not vegan) recipe from Chocolate Covered Katie blends avocados with chocolate, milk, vanilla extract, salt and sweetener for a chocolate mousse she describes as "decadent" and "sinful."
Even if a previous experience with avocado as pudding or mousse was less than positive, we think these recipes deserve a try -- Chocolate Covered Katie says that it took her five years after a bad avocado chocolate mousse experience to even consider coming up with her own recipe.
