Avocados are one of the best parts of summer. Dice them up and toss them on a salad, add them to a smoothie or blend them with a few other ingredients to make a tasty dip for chips and veggies. Unfortunately, they're also a little on the pricey side (at least as far as fruits and veggies go), which makes it even worse when they go bad!

If you're having a hard time using your avocados before they spoil, try one of these tricks to preserve this fruit.

1. Freeze them

You can freeze avocados and save them for up to five months. Wash and then peel the fruit. Add a bit of lime, lemon juice or vinegar to your avocados to keep them from browning and then puree them (they store better this way.) Put the puree into an ice cube tray and freeze. Once they are frozen, remove them and place the cubes into a storage bag so they don't freezer burn.

2. Keep fresh avocado fresh

Keep your freshly mashed avocado fresh by adding a little acid (tomatoes, vinegar or lime juice) to keep your dip from going brown.

3. Store them properly

If you have a few avocados for the week, help them last as long as possible by storing them in the fridge. The cold temps will delay the ripening process. You can ripen the avocados by putting them the counter for a day or two before slicing into it.

4. Pickle them

Pickled avocados last for about a week in the fridge, so not a long time, but maybe long enough to enjoy them on a few salads or sandwiches. After creating the brine on the stove, place your peeled and sliced avocados into the brine for at least 6 hours. Store in the fridge for about a week.
