Cooktop Cove: Pimento recipes that everyone will enjoy

The first encounter many people have with a pimento is seeing it stuffed into the cavity of a green olive. In fact, many people think it's actually part of the olive. Not only is it a vegetable on its own, according to "The Food Lover's Companion," it starts out as "a large red, heart-shaped sweet pepper that measures 3-4 inches long and 2-3 inches wide.” Also of note, the bulk of pimento pepper crops is used to make paprika.
Another misconception is that pimentos and jarred roasted red peppers are one and the same. Not so; they're both in the same family, but the flesh of pimentos is distinctively sweeter, more aromatic and more succulent than a roasted red pepper. Nonetheless, they are regularly interchanged in recipes.
