Winter squash rarely gets the attention that summer squash garners. Zucchini and yellow crookneck squash are a common side dish at restaurants, but winter squash such as butternut often is served as a colorful garnish or pureed into soup. These recipes however reflect how versatile and scrumptious this lovely squash can be.
Not only does butternut squash have a creamy, enticing mouth feel and marvelous taste, but a single serving has enough vitamin A to supersede daily requirements. Unlike its summer cousins, it can last months on a cool kitchen counter - a trait that puts most winter squashes in that category since they're harvested in the fall.
