Hummingbird Bread Recipe
Ingredients:
1.5 cups flour
2 ripe bananas, mashed
1 cup granulated sugar
3/4 cup oil
2 beaten eggs
1/2 cup chopped pecans
1/2 cup canned pineapple chunks (with juice)
1/4 cup raisins
1/2 tablespoon vanilla extract
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
Instructions:
1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
2. In a large bowl, mix together flour, sugar, oil, mashed bananas, beaten eggs, and canned pineapple chunks (with juice) until well combined.
3. Stir in chopped pecans, raisins, vanilla extract, baking soda, salt, and cinnamon.
4. Pour the batter into the prepared loaf pan.
5. Bake in the preheated oven for 55-60 minutes or until a toothpick inserted into the center comes out clean.
