Cream Cheese Stuffed Mushrooms
Ingredients:
- 1 pound mushrooms
- 8 ounces cream cheese, softened
- 2 tablespoons butter
- 1 tablespoon minced garlic
- 1 tablespoon minced fresh parsley
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions:
1. Preheat oven to 400 degrees F.
2. Clean mushrooms with a damp paper towel. Carefully break off stems and finely chop.
3. Over medium-high heat, melt butter and cook stems. Add garlic powder and garlic. Follow with cream cheese and half of Parmesan cheese. Combine. Once cheese is melted, move off heat.
4. Stuff mushroom caps with cream cheese mixture.
5. Arrange mushrooms in a single layer in a shallow baking dish. Top off with remaining Parmesan cheese.
6. Bake in preheated oven for 15 minutes, or until mushrooms are cooked and stuffing is lightly browned. Top with fresh parsley.
