Peanut Butter Lunch Lady Cookie Bars
Ingredients:
1/2 cup unsalted butter, softened
1 cup creamy peanut butter
1 cup granulated sugar
1/2 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup semi-sweet chocolate chips (optional)
Instructions:
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish and set aside.
In a large mixing bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
