Cooktop Cove: The easiest pancake recipe ever. We can't stop making this one at our house

Pancakes have a magical way of bringing people together. Whether it's a cozy weekend breakfast with family or a celebratory brunch with friends, there's something undeniably heartwarming about sitting down to a stack of fluffy, golden pancakes. While many pancake recipes can be complicated and time-consuming, there's no need to spend hours in the kitchen to achieve the perfect flapjack. In fact, with just a few simple ingredients and steps, you can whip up a batch of easy pancakes that will have everyone asking for seconds.
As a kid, one of my fondest memories was waking up on a lazy Saturday morning to the aroma of freshly-made pancakes wafting through the house. My mom had a secret recipe she'd use, and though I never knew what made those pancakes so special, they were always the highlight of my weekend. Years later, I rediscovered that recipe and realized it was simpler than I ever imagined. But it wasn't just the taste that made those pancakes unforgettable—it was the love and care that went into making them. So, I'm sharing this easy pancake recipe with you, not only because it's delicious, but because I believe that food is one of the most powerful ways to connect with the people we love.
Easy Pancakes
Ingredients:
1 cup all-purpose flour
2 tablespoons granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup milk
1 large egg
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
Cooking spray or additional melted butter, for the griddle
Instructions:
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix; the batter should be slightly lumpy.
Preheat a griddle or non-stick skillet over medium heat. Lightly coat the surface with cooking spray or additional melted butter.
For each pancake, pour 1/4 cup of batter onto the griddle. Cook until bubbles form on the surface, then flip and cook until the other side is golden brown, about 1-2 minutes per side.
Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh fruit, or whipped cream. Enjoy!
