Cooktop Cove: Looks delicious, can't wait to try it out for dinner tonight!

As someone who loves cooking, I’m always looking for ways to make my favorite dishes healthier. However, sometimes this can end up sacrificing flavor or texture. That’s why I was so excited when I stumbled upon this recipe for Skinny Chicken Broccoli Casserole. It’s the perfect balance of healthy and delicious, and it’s become a staple in my meal rotation.
One reason why I love this recipe is that it’s incredibly easy to make. Even if you’re not an experienced cook, you can pull this off. Plus, it’s a great way to use up any leftover chicken you have in the fridge. But what really sets this recipe apart is the taste. Skinny Chicken Broccoli Casserole
Ingredients:
- 2 cups of cubed cooked chicken
- 3 cups of chopped broccoli florets
- 1 cup of nonfat plain Greek yogurt
- 1/2 cup of skim milk
- 1/2 cup of shredded cheddar cheese
- 1/4 cup of grated Parmesan cheese
- 1 tablespoon of all-purpose flour
- 1/4 teaspoon of garlic powder
- 1/4 teaspoon of onion powder
- Salt and pepper to taste
Instructions:
1. Preheat your oven to 375°F.
2. In a large bowl, whisk together the Greek yogurt, milk, cheddar cheese, Parmesan cheese, all-purpose flour, garlic powder, onion powder, salt, and pepper. Set aside.
3. In a 9x13 inch baking dish, add the cubed chicken and chopped broccoli. Stir to mix everything together.
4. Pour the cheese sauce over the top of the chicken and broccoli mixture, using a spatula to spread it evenly.
5. Bake for 25-30 minutes, or until the cheese is bubbly and lightly golden on top.
6. Let the casserole cool for a few minutes before serving. Enjoy!
