1½ cups flour

¼ lime juice (or key limes) plus 1 teaspoon zest
¼ cup flour
2 teaspoons cornstarch
1/8 teaspoon salt
1/4 teaspoon baking powder
1 teaspoon vanilla extract
Instructions:
1. Preheat oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper.
2. For the shortbread crust, cream together butter and powdered sugar until fluffy. Mix in 1½ cups flour until crumbly. Press into the pan and bake for 15-20 minutes until edges are golden.
3. For the key lime topping, whisk granulated sugar and eggs, then add lime juice and zest. Sift in ¼ cup flour, cornstarch, salt, and baking powder. Stir in vanilla extract.
4. Pour the key lime topping over the baked shortbread crust.
5. Bake for 20-25 minutes until the topping is set and edges turn golden.
6. Cool the bars in the pan on a wire rack. Use fridge to set. This may take 1 hour to chill.
7. Dust with powdered sugar for garnish.
8. Cut into squares or rectangles and serve. Enjoy!
