Pork Chops with Cheesy Scalloped Potatoes
Ingredients:
4 pork loin chops
1 box scalloped potatoes, 4.7 oz
2/3 cup half-and-half
2 cups boiling water
3/4 cup shredded cheese, 3 oz (we used cheddar)
1/3 cup sliced green onions
1 teaspoon garlic powder
1 teaspoon paprika
5 slices of bacon, crisply cooked and crumbled (Optional)
Instructions:
1. Preheat the oven to 400°F.
2. In a large skillet, sear the pork loin chops until golden brown on both sides. Set them aside.
3. In a mixing bowl, combine the contents of the scalloped potatoes box with half-and-half and boiling water. Mix well. Stir in the shredded cheese, sliced green onions, garlic powder, and paprika into the scalloped potatoes mixture. (Optional) If using bacon, crumble it and set half aside for later. Sprinkle the other half evenly at the bottom of a casserole dish.
4. Place the seared pork loin chops on top of the bacon layer in the casserole dish.
5. Pour the scalloped potatoes mixture over the pork chops, ensuring they are fully covered.
6. Cover the casserole dish with foil and bake for 25 mins, or until the potatoes are tender and the pork chops are cooked through.
7. (Optional) During the last few minutes of baking, remove the foil and sprinkle the remaining crumbled bacon on top of the casserole.
8. Once done, let the casserole rest for a few minutes before serving.
