Growing up, my grandmother's kitchen was always filled with the most delightful aromas. One scent that always brings back fond memories is the sweet, buttery fragrance of her Butterscotch Rice Krispies Treats. These delectable treats were her secret weapon to bring smiles to our faces on even the dreariest days. Now, as a way to honor her and bring a little bit of that childhood magic into my own home, I'm going to share her cherished recipe with you.
There is something truly magical about the combination of butterscotch and crispy rice cereal. The smooth, velvety butterscotch melds with the crunchy texture of the cereal, creating a symphony of flavors that dance on the tongue. I remember eagerly waiting by the oven as my grandmother prepared these treats, mesmerized by the alchemical transformation that occurred when a few simple ingredients came together. Recipe: Butterscotch Rice Krispies Treats
Ingredients:
8 cups Rice Krispies cereal
Mini marshmallows (20 ounces total)
Butterscotch pudding mix (7 ounces total)
1/2 cup salted butter
1 teaspoon vanilla extract
For the glaze:
1/2 cup butterscotch baking chips
2 tablespoons heavy cream, plus extra as needed
Instructions:
1. In a large saucepan, melt the salted butter over low heat.
2. Add the mini marshmallows to the saucepan and stir until completely melted and smooth.
3. Stir in the vanilla extract and butterscotch pudding mix until well combined.
4. Remove the saucepan from heat and fold in the Rice Krispies cereal until evenly coated.
5. Press the mixture into a greased 9x13-inch pan using a spatula or parchment paper.
Pro Tip: If you are using your hands, you might want to spray them with cooking spray so it's easier to do this step.
6. For the glaze, melt the butterscotch baking chips with 2 tablespoons of heavy cream in a microwave-safe bowl. Heat in short intervals, stirring in between, until the mixture is smooth and creamy. Add extra heavy cream if needed to achieve a pourable consistency.
7. Drizzle the butterscotch glaze over the Rice Krispies Treats in the pan.
8. Allow the treats to cool and set before cutting them into squares.
