Recipe: Slow Cooker Tennessee BBQ Beef Casserole
Ingredients:
1.5 lbs chuck steak
1 onion, finely chopped
1 can (14 oz) diced tomatoes
2 tsp minced garlic
2 tbsp tomato paste
2 bay leaves
1 tbsp brown sugar
2 tbsp beef stock
1 packet Tennessee Smokehouse BBQ rub
Carrots, sliced
Frozen peas
Cornstarch (optional)
Instructions:
1. Place whole chuck steak in the slow cooker.
2. Add all ingredients except carrots and peas.
3. Cook on low for 8 hours.
4. During the last 2 hours, add carrots. If desired, add carrots at the start.
5. Half an hour before serving, add peas.
6. The meat will become tender and fall apart.
Serve the casserole with mashed potatoes.
Note: This recipe can easily be doubled to serve a larger gathering, making it ideal for potlucks or family gatherings.
