One-Pot Macaroni Cheeseburger Soup Recipe:
Ingredients:
1 pound ground beef
8 ounces uncooked elbow macaroni
8 ounces sharp cheddar cheese
1 cup diced yellow onion
1 cup sliced carrots
1 cup sliced celery
2 teaspoons each dried thyme and oregano
6 tablespoons butter
5 cloves minced garlic
4 tablespoons all-purpose flour
8 cups chicken broth
1 cup heavy cream
1 teaspoon white balsamic vinegar
Salt and pepper to taste
Instructions:
1. Brown 1 pound of ground beef in a large pot over medium heat with 1 teaspoon each of dried oregano and thyme. Season with salt and pepper. Once cooked, set aside.
2. In the same pot, melt butter over medium heat.
3. Add 1 cup each of diced onions, sliced carrots, and sliced celery. Sauté for 10 minutes over medium-high heat.
4. Reduce heat to medium. Add 5 minced garlic cloves and remaining oregano and thyme. Cook for 1 minute.
5. Sprinkle in flour and cook, stirring for 1 more minute.
6. Deglaze with a splash of chicken broth. Add the remaining chicken broth and macaroni noodles. Bring to a simmer over medium-high heat.
6, Once simmering, reduce heat to low and simmer for 6 minutes until the pasta is al dente, stirring occasionally.
7. Remove from heat, stir in 1 cup of heavy cream and shredded cheese.
8. Add 1 tsp of white balsamic vinegar and the cooked ground beef back to the pot. Heat for a few minutes until the beef is warm.
9. Season to taste with salt and pepper. Enjoy!
