Ingredients:
- 3 ripe avocados, pitted and diced
- 2 tablespoons red onion, finely chopped
- 2 tablespoons sun-dried tomatoes, chopped
- 1 tablespoon cilantro, minced
- Juice of one lime
- Salt and pepper to taste
- 8 egg roll wrappers
- 1 egg, beaten (for egg wash)
- Vegetable oil for frying
Instructions:
1. In a medium mixing bowl, gently combine the diced avocados, red onion, sun-dried tomatoes, cilantro, and lime juice. Season with salt and pepper. Be careful not to mash the avocados too much; you want the mixture to have a chunky texture.
2. Lay an egg roll wrapper flat on a clean surface. Spoon approximately 1/4 cup of the avocado mixture onto the lower third of the wrapper.
