Today, I want to share a simple yet divine recipe for Mango Sago, a dessert that's as sweet and satisfying as a hug from grandma. Originally hailing from Asia, this dish is a beautiful marriage of tropical mango and chewy sago, stirred together in creamy coconut milk. Whether it's a special treat for your next family gathering or just a sweet surprise for the kiddos after a long school day, Mango Sago is sure to light up faces around your table.
Mango Sago is pretty much splendid on its own, but you could pair it with some light and crispy fortune cookies or a small scoop of vanilla or coconut ice cream if you’re looking to indulge a bit. Ingredients
- 1 cup sago pearls
- 2 large ripe mangoes, peeled and diced
- 1 cup coconut milk (full-fat for that creamy goodness)

- 3 cups of water (for boiling the sago)
- 1 ripe mango for pureeing

Directions
1. Start by bringing those 3 cups of water to a rolling boil in a pot, then gently sprinkle in the sago pearls. Cook them until they become wonderfully translucent, which usually takes about 10-15 minutes.
2. Once done, switch off the heat, cover the pot, and let the sago pearls steam in their own warmth for about 10 minutes. It makes them just right - soft, but with a gentle bite.
3. Drain the sago and give them a nice, cool rinse under cold running water. This step helps them stop cooking and keeps each pearl separate and springy.
4. In a bowl, whisk together the coconut milk and sugar until that sugar is all dissolved and feeling part of the sweet creamy mix.
5. Let's dress those sago pearls! Stir them into the coconut milk mixture until they're all merrily swimming together.
6. For a lush mango swirl, puree one of the mangoes using a blender or a hand mixer. You'll want this puree smooth as silk.
