Cooktop Cove: New method for these brats, but definitely a keeper!
By Morgan Reed
Today, we explore a hearty dish perfect for any season: Oven Lager Braised Brats with Peppers. This dish combines the robust flavors of bratwurst sausages with the sweetness of bell peppers, all braised beautifully in the rich, malty notes of lager. Originating from Germany where bratwurst is a staple, this recipe has crossed oceans and adapted to various tastes. Perfect for a cozy family dinner or to wow guests at a casual gathering, it's not only delightful but also easy to prepare.
This dish pairs wonderfully with a variety of sides. For a traditional approach, serve it with warm, buttery mashed potatoes or a tangy sauerkraut to balance the richness of the brats. A light, crisp salad dressed with a vinaigrette can add a refreshing contrast. And of course, don’t forget to pour a glass of the lager you used in cooking, to harmoniously bridge the meal together.
Oven Lager Braised Brats with Peppers
Servings: 4 servings
Ingredients
4 bratwurst sausages
1 large onion, sliced
2 bell peppers (one red, one yellow), sliced
2 cloves garlic, minced
12 oz lager beer
2 tablespoons olive oil
1 teaspoon paprika
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions
1. Preheat your oven to 375°F (190°C).
2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the bratwurst sausages and cook until browned on all sides, about 5-7 minutes. Remove and set aside.
3. In the same skillet, add the onions, bell peppers, and garlic, sautéing until they start to soften and caramelize, about 5 minutes.
4. Return the brats to the skillet. Sprinkle with paprika, salt, and pepper. Stir to combine the flavors.
5. Pour the lager over the sausage mixture, making sure to scrape any bits off the bottom of the skillet.
6. Place the skillet in the preheated oven and braise for about 25-30 minutes, or until the brats are fully cooked and the peppers are tender.
7. Garnish with fresh parsley before serving.
Variations & Tips
While this recipe is simple and delicious as is, you can easily tweak it to suit your taste or what you have on hand. Try using different types of beer for a change in flavor profile; a darker stout will give a richer taste, whereas an ale might lend a lighter note. For a spicier kick, include a few slices of jalapeño or a dash of chili flakes. Vegetarians in the family? Substitute the bratwurst with your favorite plant-based sausages.
