When the summer heat peaks and you're looking for a satisfying dish that won't glue you to the stove, this BLT Macaroni Salad comes to the rescue! Combining the classic flavors of a BLT sandwich with the creamy comfort of macaroni salad, this dish is a win-win for any gathering or a simple family meal. Plus, who can resist the allure of bacon in a fresh, tangy pasta salad?
This BLT Macaroni Salad is incredibly versatile. It's perfect on its own for a light lunch or alongside grilled meats, such as chicken or burgers, for a hearty dinner. If you're heading to a potluck or planning a picnic, it pairs wonderfully with corn on the cob, fresh watermelon slices, and a chilled lemonade.
BLT Macaroni Salad
Servings: 6
Ingredients
2 cups dry elbow macaroni
6 slices bacon, cooked and crumbled
1 large tomato, diced
1/4 cup red onion, finely chopped
2 cups chopped romaine lettuce
1/2 cup mayonnaise
1/4 cup ranch dressing
1 tablespoon white vinegar
1 teaspoon sugar
Salt and pepper to taste
Directions
Cook the macaroni according to the package directions. Drain and set aside to cool.
In a large mixing bowl, combine the cooled macaroni, crumbled bacon, diced tomato, and chopped red onion.
In a small bowl, whisk together mayonnaise, ranch dressing, white vinegar, and sugar to create the dressing.
Pour the dressing over the macaroni mixture and stir until everything is well coated.
Season with salt and pepper to taste.
Gently fold in the chopped romaine lettuce just before serving to keep it crisp.
Serve chilled or at room temperature.
Variations & Tips
For a lighter version, substitute Greek yogurt for the mayonnaise or use a low-fat mayonnaise. To spice it up a bit, add a dash of hot sauce or some diced jalapeños to the salad. If you're a fan of cheese, sprinkle some shredded cheddar on top before serving for an extra layer of flavor.
