Cooktop Cove: That dish got gobbled up in record time – not a trace remained
By Morgan Reed
Snickerdoodle cobbler is a delightful twist on the classic snickerdoodle cookie, transforming it into a comforting and warm dessert that's perfect for any occasion. This cobbler brings together the familiar cinnamon-sugar flavors with a soft, cake-like consistency, making it a hit among both kids and adults. Its roots can be traced back to traditional American baking, but with a creative spin that makes it unique and memorable. You'll find that this dish is not only easy to make but also provides a sense of nostalgia and hominess that's hard to resist.
This snickerdoodle cobbler pairs wonderfully with a scoop of vanilla ice cream or a dollop of freshly whipped cream. The creamy texture complements the cinnamon-sugar flavors beautifully. For an extra touch, you can drizzle some caramel sauce on top. It's best served warm, and if you're planning a gathering, consider pairing it with a hot cup of coffee or a warm apple cider to create a cozy and inviting dessert experience.
Snickerdoodle Cobbler
Servings: 8
Ingredients
1/2 cup unsalted butter
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 cup whole milk
1 teaspoon vanilla extract
1 1/2 teaspoons ground cinnamon
1 1/2 cups light brown sugar
1 3/4 cups hot water
Directions
1. Preheat your oven to 350°F (175°C). Place the butter in a 9x13 inch baking dish and put it in the oven just long enough to melt.
2. In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt. Slowly mix in the milk and vanilla extract until a smooth batter forms.
3. Pour the batter over the melted butter in the baking dish. Do not stir.
4. In a small bowl, combine the ground cinnamon and light brown sugar. Sprinkle this mixture evenly over the batter. Do not stir.
5. Carefully pour the hot water over the entire mixture without stirring. The water will help create a caramel-like sauce as the cobbler bakes.
6. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the cobbler has set.
7. Allow the cobbler to cool for at least 15 minutes before serving. This allows the sauce to thicken slightly. Serve warm.
Variations & Tips
For a fun twist, you can add chopped apples or pears to the batter before baking to create an apple snickerdoodle cobbler. If you prefer a richer flavor, substitute half of the water with apple cider. For those who are gluten-intolerant, replace the all-purpose flour with a gluten-free baking mix. And if you're feeling adventurous, try adding a pinch of nutmeg to the cinnamon-sugar mixture for an extra layer of warmth and spice.
