Cheesesteak Tortellini in Creamy Provolone Sauce
Servings: 6
Ingredients
1 lb cheese tortellini
1 lb beef sirloin, thinly sliced
1 green bell pepper, sliced
1 small onion, thinly sliced
2 cloves garlic, minced
2 tbsp olive oil
2 tbsp butter
2 tbsp all-purpose flour
2 cups milk
2 cups shredded provolone cheese
Salt and pepper to taste
1/4 cup freshly grated Parmesan cheese (optional)
Chopped parsley for garnish (optional)
Directions
Cook the cheese tortellini according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium-high heat. Add the sliced beef sirloin and cook until browned. Remove from the skillet and set aside.
In the same skillet, add the sliced bell pepper, onion, and garlic. Sauté until they are soft and slightly caramelized.
Remove the vegetables from the skillet and set aside with the beef.
In a separate saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute.
Gradually whisk in the milk, making sure no lumps form. Cook until the mixture thickens, stirring constantly.
Reduce the heat to low and add the shredded provolone cheese, stirring until completely melted and smooth.
Add the beef and sautéed vegetables back into the skillet with the cheese sauce. Stir until everything is well coated.
Toss in the cooked tortellini and gently combine everything together. Season with salt and pepper to taste.
If desired, sprinkle with freshly grated Parmesan cheese for an extra cheesy touch.
Garnish with chopped parsley before serving. Enjoy!
Variations & Tips
For picky eaters, you can substitute the green bell pepper with red bell pepper or omit it entirely. You can also use chicken or turkey instead of beef if that’s more to your family’s taste.
