Slow Cooker Cheesy Bacon Ranch Potatoes
Servings: 6-8 servings
Ingredients
2 1/2 pounds of potatoes, peeled and cut into small cubes
1 cup shredded cheddar cheese
6 slices of cooked bacon, crumbled
1 packet of ranch dressing mix
1/2 cup sour cream
1/2 cup mayonnaise
1/4 cup chopped green onions (optional)
Salt and pepper to taste
Non-stick cooking spray
Directions
Spray your slow cooker with non-stick cooking spray.
Layer one-third of the potatoes in the bottom of the slow cooker.
Sprinkle one-third of the cheese and bacon over the potatoes.
In a small bowl, mix the ranch dressing mix, sour cream, and mayonnaise together.
Drop dollops of the ranch mixture over the cheese and bacon.
Repeat the layers two more times, ending with a layer of cheese and bacon on top.
Cover and cook on low for 6-7 hours, or until the potatoes are tender.
Spoon the cooked potatoes into a serving dish and garnish with chopped green onions if desired.
Serve hot and enjoy!
